It’s almost time to start shucking! The 2024-2025 shellfish harvest season begins Oct. 1. Oyster harvesting is a long-standing Lowcountry tradition. Whether you like yours steamed or raw, there are a few things you need to know before you head out.

Experts from Charleston Oyster Farm say oysters are a vital part of South Carolina’s eco system. That’s why shellfish farmers say you need to be a responsible harvester this season.

“Without oysters lining the creek beds this area would look completely different” Owner of Charleston Oyster Farm Tom Bierce said. “The barrier islands are our first line of defense against storm surge and wave energy and then the marsh is the second line of defense. The grass dampens the wave energy and oysters kind hold the shoreline in place.”
